Bacalao Azul

Blue cod is indigenous to New Zealand, with an elongated body and a smoothly sloping head. Its flesh is white, of a medium texture and low in oil, making it apt for various cooking options. It is a bottom-dwelling species that thrives in cold waters such as those south of the Cook Strait and around the Chatham Islands. Blue cod are mostly caught in sustainably managed inshore fisheries.
