Mediterranean Lamb Gyros with Tzatziki and Pita


Ingredients:


  • 500g lamb leg or shoulder, thinly sliced

  • 2 tbsp olive oil

  • 1 tbsp dried oregano

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • Juice of 1 lemon

  • 4 pita breads

  • Fresh vegetables (tomato, red onion, lettuce)

  • Tzatziki sauce (recipe below)


For the Tzatziki Sauce:


  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and drained

  • 1 clove garlic, minced

  • 1 tbsp lemon juice

  • 1 tbsp fresh dill, chopped

  • Salt and pepper to taste



INSTRUCTIONS

 

Step 1

Marinate the Lamb: Combine olive oil, oregano, garlic, cumin, paprika, salt, pepper, and lemon juice. Add lamb slices and marinate for at least 1 hour.


Step 2

Make Tzatziki Sauce: Mix yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Chill.


Step 3

Cook Lamb: In a hot pan, sear marinated lamb slices for 5-7 minutes or until cooked through.


Step 4

Assemble Gyros: Warm pita breads and fill with lamb, fresh vegetables, and tzatziki sauce.


Step 5

Serve: Wrap gyros in parchment or foil and serve hot with extra tzatziki.
